Zest Labs (formerly Intellicheck) developed ZEST Fresh — a cold chain monitoring platform that combines IoT sensors with blockchain data security. Every refrigerated container, truck, and storage room is equipped with sensors for temperature, humidity, and shocks; all measurements are secured on the blockchain.

The cold chain is the most critical and least monitored part of the food supply chain. The problem: cold chain interruptions are often only discovered once products have already spoiled. Disputes over responsibility are difficult to resolve because conventional monitoring systems can be tampered with. Zest Labs solves this: IoT sensors capture cold conditions in real time; the data is immutably secured on the blockchain; smart alerts notify immediately when limits are exceeded. Special feature: ZEST Fresh uses historical cold chain data to create dynamic remaining shelf-life forecasts — a lettuce stored for 3 hours at 8°C instead of 2°C has measurably shorter shelf life.
